What makes this sauce so special is how well the chipotle and coffee work so perfectly together. The coffee (in the form of espresso) creates a deep background. In the final product the coffee flavor is not an upfront, noticeable flavor but adds that “something special”. In contrast is the chipotles in adobo. Slightly spicy, slightly smoky, Chipotle is the star in the sauce. Originally developed for pork ribs, then we quickly discovered it is incredibly versatile. From a simple hamburgers to grilled chicken it works equally as well. It also adds a great flavor to grilled shrimp. It works equally as well as a mopping sauce while grilling and caramelizes beautifully. As a finishing sauce use it warm for the best flavor.
Chipotle Espresso Barbecue Sauce Tips
This is a chunky type of BBQ sauce. We enjoy the sweet bits of onion and spicy bits of the chipotle. On the other hand if a smoother texture is preferred, use a blender after cooking. Blend to your desired consistency.
This is a forgiving sauce, in other words it is very difficult to mess up. Want it spicier add more chipotle. Like a sweeter sauce try adding honey for an additional layer of sweetness, otherwise just add more brown sugar. For more tangor brightness, squeeze some lemon or lime juice. This is a great sauce for experimenting by adding new and different flavors. As a word of advice just taste as you add.
When serving this sauce as a finishing sauce, warm it thoroughly before serving. This allows the flavors to waken up if previously refrigerated.
Chipotle Espresso Barbecue Sauce
Ingredients
- 2 tbsp vegetable oil
- 1 onion (large) small diced
- 2 tbsp chipotle in adobo chopped fine (approx. 3 peppers)
- 1 cup ketchup
- 6 oz espresso fresh brewed
- ½ cup apple cider vinegar
- ¼ cup Dijon mustard
- 2 tbsp Worcestershire sauce
- ½ cup light brown sugar packed
- 1 tbsp cumin powder
- 1 tbsp smoked hot paprika powder
- 1 tsp garlic powder
- ½ tsp black pepper or to taste
- 1 tsp sea salt or to taste
Instructions
- Heat oil in a medium sauce pan, add the onions and sauté until soft and translucent. Add chipotle and continue to sauté for another minute or so until well incorporated and fragrant.
- Add all remaining ingredients stir and bring to a boil, reduce to a simmer and cover until slightly reduced and thickened.
- Use immediately or store in clean sterile jars and refrigerate, will keep for 2 or more weeks
